CHIMICHURRI

CHIMICHURRI SAUCE
• ¼ cup olive oil
• 3 large or 5 small cloves of garlic, minced
• Handful of flat-leaf parsley, finely chopped
• 1 tsp. hot red pepper flakes
• 1 tsp. of salt
• ¼ tsp. pepper
• 2 Tbs. red wine vinegar
• Zest of half a lemon
• Juice from half a lemon
• Mix together and let rest at room temperature for an hour. Stir again at service.
• Choose your favorite beef-pork blend sausage.
If you buy from an Argentine market, ask for Chorizo Argentino.
