Wallaby's West rejuvenates its menu under new sous chef
A
new sous chef has been
cooking up exciting changes at
Wallaby's West, the restaurant
at the Greg Norman Course
that captures the spirit of the outback.
Joining the team last November, sous
chef Michael Henry "threw away the old
menu and completely revamped the
culinary side of Wallaby's," said PGA
WEST Resort Director of Food &
Beverage Flavio Ramirez.
The efforts have resulted in a fresh menu
where Henry displays his expertise with
items such as black beans and corn on a
quesadilla, pork belly burritos and
sandwiches, and pancakes where he uses
protein instead of buttermilk.
"He's using a lot of farm-to-table items and
flavors that our Members and guests are
loving right now," Ramirez said.
Burger Night at Wallaby's offers diners a
choice of a Wagyu, turkey or vegan burger
with fries, while Italian Night features
dishes such as Penne al Forno, oven-baked
meatballs, and Spaghetti Amatriciana.
While Wallaby's offers a unique culinary
experience, Ernie's Bar & Grill, located at
the Tournament Clubhouse, focuses on
all-American contemporary cuisine. Both
have excelled at take-out dining of late.
"We use the very best items on the menu
and it fits in the container perfectly," said
PGA WEST Resort General Manager Don
Zauner. "We make it possible to get a nice,
hot meal to take out and enjoy, whether
you're a Member, a resident in the area, a
vacationer or resort guest."
