I'm one of the starters and I do some marshaling. how long at classic club? 5 years. what does your job entail? I try to keep a good pace going and get groups started at their scheduled times. what do you enjoy most? Being outside all day and working with a really nice team. what's most chal- lenging? Balancing the pace of play with making sure people are having a good time. what's your favorite hole on the course? I love our signature hole, No. 12. It's only 160 yards from the men's tee, but it's a challenge. your greatest achievement? I won the Club Championship at Monterey Country Club a few years ago. what do you like to do outside of work? I spend time with my family, including my 96-year-old mom. what would peo- ple be surprised to know about you? I was a dentist for 33 years be- fore I retired and began working on the golf course. Job title? Line Cook. How long at Classic Club? 5 years. what does your job entail? I'm responsible for all the prep work on the pantry side. I also help the dishwashers and do prep work in other stations when I have time. what do you enjoy most about your job? Learning new things every day. what is your fa- vorite dish to eat at Bella- trix? The grouper. It's simple and good. what is your fa- vorite food to make at Bella- trix? I make pico de gallo and guacamole every few days, so I've gotten pretty good at those. We also make great tacos in the kitchen (especially if we have any leftovers from Prime Rib Night). what's most challenging about your job? The one busy hour every day that Happy Hour overlaps with dinner. your greatest achievement? Working full- time and going to culinary school part-time right now.
